Cream Cheese Cupcakes
3 8 oz pkg cream cheese – softened
5 eggs
1 cup sugar
½ tsp vanilla
mix cream cheese and eggs together. Add sugar and vanilla
Beat until smooth
Pour into 24 paper cups in tin a little less
than ¾ full.
Bake at 300 for 35 to 40 minutes. Remove from oven and cool 5 minutes. A well will form in the center of each
one. Fill center with topping made of:
1 cup sour cream
¼ cup sugar
¼ tsp vanilla
then place a small spoonful of cherry pie
filling on each and return to oven for 5 minutes more. Chill and serve.
